Traditional Kitchens Inspire Traditional Cooking

Cooking in a traditional country kitchen tends to inspire preparing meals from scratch… no ‘production-line’ packaged food, no ‘almost tasty’ pre-cooked meals, and no bland frozen desserts…

Consider for a moment, when was the last time you tasted a good old home-made Peach Crumble, or a warm mudcake with icecream… or a truly delicious, hot apple pie… the kind with a hint of spice and crunchy pastry?

Well, here’s that truly delicious hot apple pie that you’ll want to make again and again… and your family and friends will be encouraging you to do so too…

Delicious Apple Pie

Ingredients:

PASTRY
155g plain flour
30g icing sugar
90g butter (cut into pieces)
2 lightly beaten egg yolks
1 tablespoon cold water
FILLING
12 cooking apples, peeled and cored
50g butter
45g soft brown sugar
1 teaspoon cinnamon
1 teaspoon mixed spice
1 egg white
1 teaspoon caster sugar

Method:

1. Preheat oven to 210
2. Grease a 23cm pie dish.
3. Add flour and sugar to a bowl. Stir.
4. Add butter.
5. Rub butter into the flour with fingertips until mix resembles crumbs.
6. Add egg yolks.
7. Mix to a firm dough.
8. Turn onto a floured board and knead until smooth.
9. Halve the pastry.
10. Roll out one half of the pastry to fit the bottom of the pie dish.
11. Press pastry into the pie dish.
12. Cover pie dish and extra half of pastry with plastic wrap and place in fridge for 20 minutes.
13. Cut each apple into 8 slices.
14. Melt butter in large fry pan.
15. Add brown sugar and spices.
16. Stir over medium heat until sugar dissolves.
17. Add apples and mix gently.
18. Cover and cook for 10 minutes.
19. Cook uncovered further 5 minutes.
20. Cool.
21. Roll second half of pastry out to the size of the pie dish.
22. Pour cooled apple mix into pie dish.
23. Cover with second half of pastry. Press lightly around rim of dish.
24. Trim edges.
25. Brush pie top with egg white.
26. Sprinkle with sugar.
27. Bake 40 minutes.
28. Serve warm.
